- Why add water?
- The sesame oil and honey mixture can be very intense. Water loosens the structure making it more pourable.
- Can I use tahini (sesame paste)?
- Yes, it makes it even creamier, but the flavour will be more intense.
Sesame, caper & lime dressing
This sauce is East meets West: the salty character of Italian capers mixes with the distinct, toasted flavour of Far Eastern sesame oil. A true 'umami bomb' that turns the simplest green salad or steamed chicken breast into an exciting dish. Thick, creamy, and full of texture thanks to the crunchy seeds.

Instructions
1
✓
In a dry frying pan, without fat, toast the sesame seeds over medium heat for 2-3 minutes until golden brown and fragrant. Let cool.
Tip: Toasting roasts the oils within the seeds, giving a much more intense, nutty flavour. Watch out, they burn easily!
2
✓
Finely chop the capers. Grate the garlic. Squeeze the lime juice.
Tip: The smaller the capers, the better the salty taste distributes in every bite.
3
✓
In a bowl, whisk the sesame oil, lime juice, and honey until smooth.
Tip: Sesame oil has a very dominant flavour, so we use it as a 'spice', not cooking oil.
4
✓
Add the garlic, capers, salt, pepper, and water. Whisk until frothy.
Tip: Water helps form the emulsion and adjusts the desired thickness.
5
✓
Finally, stir in the toasted sesame seeds. Let stand for 5-10 minutes before serving.
Tip: During this time, the sesame seeds absorb a little flavour but stay crunchy.
