Soak saffron in 2 tbsp warm milk for 15 mins. In remaining milk mix little sugar, crumble yeast and let rise.
Tip: Warm milk extracts saffron colour (crocin), making bread beautiful yellow.

Mix flour with salt and sugar. Add risen yeast, saffron milk, rose water and melted ghee.
Tip: Fat (ghee) and sugar soften dough and prevent drying out.

Knead dough smooth. Should get soft, shiny dough.
Tip: If too hard add tiny bit more milk.

Prove covered 1 hour in warm place.
Tip: Due to fats in milk rise might be slower than water dough.

Divide into 4, shape approx 15 cm discs. Prick centre with fork so doesn't puff up too much.
Tip: Docking ensures bread stays flat and bakes evenly.

Place on baking tray lined with parchment, brush with beaten egg, rest 15 mins.
