- It spread in the baking tray.
- The butter or dough was too warm when it went into the oven. Chilling (resting) is mandatory so the fat hardens again.
Spiced honey biscuits
Honey doesn't just sweeten: due to its hygroscopic (moisture-absorbing) properties, biscuits made with it stay soft for days, or even weeks. However, because of the fructose content in honey, it browns faster in the oven than sugary doughs, so it requires extra attention.

Instructions
1
✓
Cream the soft butter with the icing sugar and honey until fluffy, then add the egg.
Tip: Creaming introduces air into the dough, making the biscuit structure lighter.
2
✓
Mix the flour, baking powder, spices and salt, then work it into the butter mixture. Do not over-knead!
Tip: Only mix until combined.
3
✓
Wrap in cling film and refrigerate for at least 30 minutes.
Tip: During resting, the flour hydrates and the butter solidifies, making it hold its shape better during baking.
4
✓
Form walnut-sized balls, place on a baking tray lined with parchment (leave space between them!), and flatten them slightly. Bake at 180°C for 10-12 minutes.
Tip: If the bottom is already brown, take them out! The top might still seem soft, but it will harden while cooling.
