Peel the garlic and slice the chilli into rings.

Put the garlic and chilli in the oil and heat on very low heat (confit) for 15 minutes until the garlic is soft.

Tip: If the oil is too hot, the garlic will burn and become bitter. The goal is softening, not frying.

Crush with a fork or blend, season with lemon and salt.

Tip: Lemon juice highlights the flavours and cuts through the oiliness.

The garlic is too strong, what can I do?
If you blanch (boil) the cloves first in milk or water, it loses much of its pungency but the flavour remains.
