Put a large pot of water on to boil, salt generously.

Tip: The water needs to be as salty as the sea, as the pasta only absorbs flavour then.

Meanwhile, mix the ground poppy seeds, icing sugar, and vanilla sugar in a bowl.

Tip: Mixing beforehand ensures a more even flavour.

Once the water is boiling, add the pasta and cook for the time indicated on the packet (al dente).

Tip: Do not overcook, as soft pasta falls apart when mixing (starch structure collapse).

Drain the pasta, but do not rinse with water! Immediately toss with the butter.

Tip: The starchy layer remaining on the pasta and the butter form an emulsion, making the pasta juicy and preventing it sticking together.

Sprinkle with the sugary poppy seeds and toss thoroughly.

Tip: The hot pasta melts the sugar slightly, making it stick to the pasta along with the poppy seeds.
