Æbleskiver with Maple Syrup
Æbleskiver is Denmark's iconic spherical pancake. Although the name means 'apple slices', modern versions rarely contain apple. It is made in a special pan with hemispherical indentations. The texture of the batter is a cross between a pancake and a doughnut: a crispy crust on the outside and a light, airy crumb inside, provided by beaten egg whites.

Separate the eggs. Beat the whites to stiff peaks with a pinch of salt.
Tip: The egg whites mechanically introduce air into the batter, making it 'soufflé-like'.

Mix the yolks until smooth with the milk, butter and sugar, then fold in the flour mixed with baking powder. Do not overmix!
Tip: If you overmix, the gluten activates and the batter becomes rubbery. Just mix until combined.

Gently fold the egg whites into the mixture with large movements.
Tip: Be careful not to deflate the foam, or the ball will be flat.

Heat the Æbleskiver pan over a medium heat. Put a little butter in each indentation. Fill them 3/4 full with batter.
Tip: If you fill them completely, they will overflow when they start to rise.

When the edges start to set (approx. 2 minutes), turn them 90 degrees with a skewer. Cook further, then turn completely to form a sphere.
Tip: Turning in stages allows the liquid batter to fill the spherical shape.

Cook until golden brown on all sides, then serve hot with maple syrup.
Tip: The caramel flavour of maple syrup goes perfectly with the buttery batter.
