Place the bacon in a cold pan, and fry over medium heat until crispy. Remove to kitchen paper.
Tip: The rendered fat is treasure! Don't pour it away, we will fry the egg and bun in this.

Fry the sunny side up eggs in the bacon fat (or butter). Salt and pepper.
Tip: If you like a runny yolk, cover the pan for 30 seconds at the end, so the top gets heat without the yolk hardening.

Whilst the egg cooks, toast the cut sides of the buns in another pan or next to the egg.
Tip: A toasted bun doesn't get soggy from the runny egg.

Spread the bun with mayonnaise. Place the cheese on (it melts from the hot egg), then bacon, then the egg.
Tip: Put the cheese directly under or over the hot egg to melt.
