Ultimate Breakfast Burger

Who said you can only eat a burger for lunch? The breakfast burger combines the best elements of an English breakfast – egg, bacon, toast – into a hand-held form. This is the king of 'hangover cures': greasy, salty, filling, and immediately restores world order. The runny yolk acts as a natural sauce, coating the crispy bacon and soft cheese.

Instructions

1

Place the bacon in a cold pan, and fry over medium heat until crispy. Remove to kitchen paper.

Tip: The rendered fat is treasure! Don't pour it away, we will fry the egg and bun in this.
2

Fry the sunny side up eggs in the bacon fat (or butter). Salt and pepper.

Tip: If you like a runny yolk, cover the pan for 30 seconds at the end, so the top gets heat without the yolk hardening.
3

Whilst the egg cooks, toast the cut sides of the buns in another pan or next to the egg.

Tip: A toasted bun doesn't get soggy from the runny egg.
4

Spread the bun with mayonnaise. Place the cheese on (it melts from the hot egg), then bacon, then the egg.

Tip: Put the cheese directly under or over the hot egg to melt.
5

Squeeze ketchup on top, put the lid on, and cut in half (to see the runny yolk).

Tip: Prepare a napkin!

Recipe FAQ

How do I keep the yolk runny?
Fry the egg over medium heat, and only until the white sets. Do not flip (sunny side up), or if you flip, remove from heat immediately.
What makes bacon truly crispy?
Start cooking in a cold pan! This way the fat renders out slowly, and the meat becomes crispy, not burnt suddenly.
