Season the chicken cubes with salt and pepper. Heat oil in a wok until smoking, and fry the chicken until golden brown in small batches. Remove and set aside.

Tip: If you put all the meat in at once, it cools the oil and will steam. Quick searing (Maillard reaction) seals in the moisture.

In the remaining oil, fry the garlic for a few seconds, then add the onion and peppers. Stir-fry for 2-3 minutes.

Tip: The vegetables should remain crunchy (al dente), do not cook them until soft!

Toss in the pineapple, pour over the sweet and sour sauce, and bring to the boil.

Tip: The bromelain content of pineapple (if fresh) tenderises meat, but this enzyme breaks down with heat.

Mix the cornflour with a little cold water and drizzle into the hot sauce to thicken.

Tip: Starch only thickens at boiling point (gelatinisation) and forms a shiny glaze on the food.
