Walnut Kulfi

Kulfi is not simply ice cream. It is the frozen version of 'milk jam': milk is cooked for hours (reduced) until much of the water evaporates and the lactose begins to caramelise. The result is a dense, creamy, crystal-free sweet that doesn't need churning while freezing. The crunch of walnuts provides perfect contrast to the silky base.

  • Heavy-bottomed saucepan (so the milk doesn't burn)
  • Ice lolly moulds or small cups
  • Frying pan

Roughly chop the walnuts. In a pan, toast them in butter until golden brown and fragrant, then set aside to cool.

Tip: Toasting releases the essential oils in the nuts, making the flavour more intense.

Pour the milk, cream and condensed milk into the saucepan. Add the cardamom. Cook over medium heat, stirring frequently, for approx. 20-30 minutes until it thickens and takes on a slightly caramel colour.

Tip: The 'Maillard reaction' between milk proteins and lactose creates that distinctive 'baked milk' taste that is unique to kulfi.

Remove from heat and stir in the toasted walnuts. Allow to cool to lukewarm.

Tip: If you put it in the freezer hot, ice crystals may form. Cooling results in a smoother texture.

Pour into moulds and freeze for at least 6 hours (or overnight).

Tip: Since it has low water content and high sugar/fat ratio, it doesn't freeze rock hard, but remains creamy.

Before serving, dip the mould in warm water for 10 seconds to release easily.

Recipe FAQ

Why does cooking take so long?
Because much of the water must be evaporated. This gives kulfi its distinctive, dense texture without a machine.
Can I substitute condensed milk?
Condensed milk speeds up the process. If you omit it, you must cook the whole milk much longer and add more sugar.
