Æbleskiver with raspberry jam (Danish pancake balls)

Æbleskiver (literally 'apple slices', though rarely containing apple nowadays) is the iconic pastry of the Danish Christmas season (Jul). These round, chubby pancake balls are made in a special cast-iron pan with indentations. The batter's texture is somewhere between a waffle and a doughnut: a crispy crust on the outside and an airy, light dough inside, made truly juicy by the surprise jam hidden in the centre.

Instructions

1

Separate the eggs. Mix the yolks with the buttermilk (or milk), sugar, vanilla sugar, and melted butter.

Tip: The acidity of the buttermilk reacts with the bicarbonate of soda, creating extra bubbles.
2

In another bowl, mix the flour, baking powder, bicarbonate of soda, and salt. Pour in the liquid mixture and whisk until smooth.

Tip: Do not overmix, or the batter will become rubbery.
3

Beat the egg whites until stiff peaks form, then gently fold into the batter.

Tip: The air bubbles in the egg whites make the æbleskiver truly light.
4

Heat the æbleskiver pan over medium heat. Put a little oil in each indentation. Fill the wells 3/4 full with batter.

Tip: Wait until the oil sizzles.
5

When the edges of the batter start to set (approx. 1-2 minutes), place a teaspoon of jam in the centre. Then, using a skewer or stick, turn the balls 90 degrees so the runny batter flows into the indentation.

Tip: The turning technique requires practice: don't flip completely at once, but in stages to get a ball shape.
6

Cook until done, turning continuously, until golden brown all over. Serve with icing sugar.

Tip: The jam in the centre can be hot, be careful!

Recipe FAQ

I don't have a special pan. What should I do?
Unfortunately, you can only achieve the true ball shape with this. In an emergency, make small silver dollar pancakes; the taste will be similar, but the shape won't.
The centre remained raw.
The pan was too hot. The crust burns before the heat reaches the centre. Cook on a lower heat, turning patiently.
