- I don't have a special pan. What should I do?
- Unfortunately, you can only achieve the true ball shape with this. In an emergency, make small silver dollar pancakes; the taste will be similar, but the shape won't.
- The centre remained raw.
- The pan was too hot. The crust burns before the heat reaches the centre. Cook on a lower heat, turning patiently.

Separate the eggs. Mix the yolks with the buttermilk (or milk), sugar, vanilla sugar, and melted butter.
In another bowl, mix the flour, baking powder, bicarbonate of soda, and salt. Pour in the liquid mixture and whisk until smooth.
Beat the egg whites until stiff peaks form, then gently fold into the batter.
Heat the æbleskiver pan over medium heat. Put a little oil in each indentation. Fill the wells 3/4 full with batter.
When the edges of the batter start to set (approx. 1-2 minutes), place a teaspoon of jam in the centre. Then, using a skewer or stick, turn the balls 90 degrees so the runny batter flows into the indentation.
Cook until done, turning continuously, until golden brown all over. Serve with icing sugar.
