Preheat oven to 180°C. For filling, break white chocolate into a bowl, add cream, vanilla and butter. Melt together over steam or in microwave until you get a homogeneous cream. Refrigerate to firm up slightly so it spreads.
Tip: Vanilla aromatics dissolve best in fat, which is why we mix it into the butter-cream base (flavour binding).

Roll out cold dough, cut into triangles. Place a strip of vanilla cream on wide ends.
Tip: Don't coat the whole dough or it will leak. Filling should stay in the 'heart' of the dough.

Roll up croissants, place on tray, and brush with egg yolk diluted with milk.
Tip: Egg layer solidifies during baking and keeps moisture in dough.

Bake for 15-18 mins until golden brown. Once ready, dust with icing sugar.
