Sauté the onion, garlic, and ginger in the oil until soft. Add the chillies and Garam Masala, and fry for 1 minute.

Why are the prawns tough?
You overcooked them. Prawns only need a few minutes; as soon as they turn pink and curl into a 'C' shape, they are done. If they are 'O' shaped, they are overcooked.

Yes, but defrost them completely and pat them dry before cooking.
