Bacon-wrapped asparagus yakitori

The Japanese are masters of simplicity: here, two dominant textures meet. The crisp freshness of asparagus and the melting, salty richness of bacon. Heat renders the bacon fat, 'bathing' the asparagus, whilst the honey-soy glaze (tare) forms a glossy, sweet-salty coating on them.

Instructions

1

Prepare the asparagus: bend the stalk; snap off the woody end where it breaks naturally.

Tip: Asparagus moisture increases towards the tip; the woody part's dry fibres would be unpleasant.
2

Spiral wrap the bacon around the asparagus spears. If the asparagus is long, cut in half.

Tip: Stretch the bacon slightly when wrapping so it doesn't fall off as it shrinks during cooking.
3

Thread the rolls onto skewers (crosswise like a ladder) to make turning easier.

Tip: Metal or soaked wood skewers conduct heat into the centre of the roll.
4

Make the glaze: mix soy sauce, honey, crushed garlic, lemon juice, and pepper until smooth.

Tip: The viscosity of honey helps the sauce cling to the surface.
5

Start grilling the skewers on medium heat. When the bacon is almost done, brush with the glaze.

Tip: If you brush it on at the start, the sugar would burn before the bacon cooks (caramelisation vs. charring).
6

Cook until finished (another 1-2 minutes) until sticky and glossy. Sprinkle with sesame seeds to serve.

Tip: Toasted sesame seeds, being oily seeds, amplify the umami taste sensation.

Recipe FAQ

Why did the glaze burn?
Honey's sugar content caramelises (and burns) quickly. Only brush it on in the final phase of cooking!
Can I use white asparagus?
I recommend green; white has thicker skin and can be bitter when grilled.
