Bulgogi burger

Imagine American burger meeting Korean BBQ. 'Bulgogi' literally means 'fire meat', the king of marinated grilled meats in Korea. In this recipe, the classic beef patty is permeated by the sweet-salty harmony of soy sauce, sesame oil, and ginger. Sugar caramelisation during frying creates an irresistible sticky crust on the meat, guaranteeing addiction.

Instructions

1

Put minced meat in a bowl. Add soy sauce, brown sugar, crushed garlic, grated ginger, sesame oil, sesame seeds, and spring onion. Mix by hand gently, just until combined.

Tip: Don't overwork meat! If overworked, proteins bind too tight and burger becomes rubbery. Keep it airy!
2

With wet hands form 4 chubby patties. Press a small dimple in centre. Chill in fridge for 10 mins.

Tip: Resting helps flavours meld and fat cool, so patty holds together in pan.
3

Heat little oil in pan on medium. Fry patties 3-4 mins per side. Be alert: sugary marinade catches easily if heat is too high!

Tip: Sugar caramelisation gives distinctive dark, shiny coating trademark of bulgogi.
4

Meanwhile halve buns and toast cut sides.

Tip: Toasting adds crunch and prevents juices soaking pastry.
5

Assemble burger: Mayo on bottom, lettuce, shiny patty, cucumber, and good dollop of kimchi on top.

Tip: Kimchi acidity and heat perfectly cut through meat's sweet-fatty taste (flavour balance).
6

Serve immediately while hot!

Tip: Sweet potato fries go best with this.

Recipe FAQ

Why did the outside burn?
Sugar in marinade caramelises (and burns) much faster than plain meat. Fry on medium heat and flip more often!
Can I use pork?
Yes, in fact a 50-50 beef-pork mix makes it even juicier.
