Soak the corn overnight (or for at least 8 hours). Drain the next day.

Tip: Soaking is essential for dried corn, otherwise it never softens.

Put the corn in the pot, pour over the milk, add the cinnamon, cloves, and salt. Cook on low heat until kernels are soft (approx. 40 minutes).

Tip: Salt highlights sweetness, do not skip it!

When corn is soft, pour in the condensed milk and sugar. Stir in the grated orange zest too.

Tip: Only add condensed milk at the end, as its high sugar content makes it burn easily.

Cook for another 10-15 minutes stirring frequently, until you get a creamy, thick consistency.

Tip: During 'reduction', flavours concentrate and texture becomes velvety.

Tip: Becomes even creamier in the fridge by next day.

Recipe FAQ

It stayed too runny, what do I do?
It will thicken a lot while cooling due to the starch. If you still feel it's thin, cook longer without a lid to evaporate.
Can I add coconut milk?
Yes, it is a very common version to replace part of the milk with coconut milk.
