Chicken and Waffles

The marriage of salty and sweet was made in heaven, or at least in Harlem, where this dish became iconic. The meeting of crispy, spiced fried chicken and butter-soft, sweet waffle with maple syrup might seem odd at first, but your taste buds will be grateful. This is the perfect 'Brunch' dish: substantial enough for lunch, but with a breakfast vibe.

Instructions

1

Salt the chicken and marinate in buttermilk (kefir) for at least 1 hour (or overnight).

Tip: The acidity and enzymes of buttermilk break down fibres, making the meat incredibly tender.
2

Mix half the flour with the cornflour and spices (paprika, garlic, salt, pepper). Remove chicken from marinade (don't wipe completely) and toss thoroughly in the flour mixture.

Tip: Cornflour draws moisture from the surface during frying, making the coating extra crispy.
3

Fry the chicken in hot oil (approx. 170°C) until golden brown (8-10 minutes). Drain on a wire rack.

Tip: Place on a rack, not kitchen paper, so it ventilates from below and stays crispy (steam release).
4

Meanwhile prepare the waffle: Whisk egg, milk, melted butter. Add remaining flour, baking powder, pinch of salt. Cook in waffle iron.

Tip: Don't overmix the batter, or gluten development will make the waffle chewy.
5

Serving: One waffle, topped with hot chicken, and drench the whole thing in maple syrup.

Recipe FAQ

Why isn't the chicken crispy enough?
You left the cornflour out of the coating, or the oil was too cold (170-180°C is ideal). If the oil is cold, the coating absorbs it.
