- Does the alcohol evaporate?
- Partially yes, but not all of it during 10 minutes of cooking. If you want it alcohol-free, use cloudy apple juice instead of cider.
Cinnamon & blueberry cider
Hot cider is the saviour of autumn evenings. When heated, apple cider loses its carbonation but, enriched with spices (cinnamon, orange), becomes a truly soul-warming drink. The tartness of blueberries counterbalances the sweetness and gives it a beautiful colour.

Pour the cider into a saucepan, toss in the cinnamon, orange zest, and blueberries.
Tip: Crush the blueberries slightly so they release their juice and colour.

Bring to a boil, then reduce the heat to minimum and simmer gently for 10 minutes.
Tip: Do not boil vigorously, as aromas (and alcohol, if that's a factor) will be lost.

Taste, and sweeten with honey if needed.
Tip: Cider can be naturally sweet, so be careful with sugar.
