Why did it turn bitter?
You muddled the lime peel too hard, and bitter compounds were released from the white pith (albedo). Just press, don't crush it to pieces!
I don't have Cachaça, what can I substitute?
Vodka (Caipiroska) or white rum (Caipirissima), but only the sugar cane spirit gives the authentic taste.
