In a saucepan, warm the honey, butter, and spices together just until the butter melts. Allow to cool until lukewarm.
Tip: Adding spices to the fat makes their flavour more intense (fat-soluble aromas).

Mix the flour with the baking powder and salt. Beat the eggs into the lukewarm honey mixture, mix well, then pour onto the flour.
Tip: It is important that the honey is not hot, otherwise the eggs will scramble.

Knead the dough. It might be sticky at first, but do not over-flour! Wrap in cling film and refrigerate for at least 1 hour.
Tip: During chilling, the butter firms up and the flour absorbs moisture, making the dough manageable and rollable.

Preheat the oven to 180°C. On a floured surface, roll out the dough to 3-4 mm thickness and cut out the figures.
Tip: Try to cut shapes as economically as possible to minimise re-rolling scraps (too much kneading can make it tough).

Bake on baking parchment for 8-10 minutes. They will still be soft when taken out but will harden as they cool.
Tip: If the edges start to brown, remove immediately, as the honey makes them burn easily and turn bitter.
