Classic homemade iced tea

The secret to the perfect iced tea is 'shock-cooling' or making a strong concentrate. Many make the mistake of letting the finished tea cool slowly, causing it to turn cloudy (tannins precipitate) and the flavour to go flat. In this recipe, we make a strong, hot essence which we dilute with ice and cool in moments, keeping the flavours fresh and vibrant.

Make a strong tea concentrate: steep the tea leaves in 300 ml hot water for 5 minutes.

Tip: We are intentionally making tea stronger than usual because the ice will dilute it later.

Strain the tea and stir in the honey whilst still hot.

Tip: In the hot liquid, the honey dissolves in moments (solubility); this would be much harder when cold.

Pour in the cold water and lemon juice.

Tip: The acidity of the lemon juice stabilizes the colour of the tea and prevents browning (antioxidant effect).

Fill glasses to the brim with ice and place lemon slices amongst the cubes.

Tip: Plenty of ice is key: if you use too little, it just melts and waters down the drink without cooling it enough.

Pour the lukewarm tea mixture over the ice.

Tip: Sudden cooling 'locks in' the aromas.

Place the mint leaves in your palm and clap them once with your other hand, then add to the drink.

Tip: This 'clapping' ruptures the veins of the leaf, releasing essential oils without crushing and browning the leaf.

Serve immediately with a straw.

Tip: Stir before drinking to equalize the temperature.

Why did the tea turn cloudy?
This is the 'tea cream' phenomenon: caffeine and tannins bind together in the cold. Adding a little hot water or lemon juice (acid) will clear it up again.
