- Why is the waffle sticking?
- The batter is stickier because of the sugar content in the honey. Grease the iron more thoroughly, and wait a little longer before opening it so the crust can set.
- It burns too soon!
- Honey caramelises (and burns) at a lower temperature than sugar. Turn the heat down on the iron!
Festive gingerbread & orange waffles
We are locking the scents of Christmas (cinnamon, cloves, orange) into this waffle. The trick is "activating" the spices: since aroma compounds are fat-soluble, mixing them into warm butter gives a much more intense flavour than just sprinkling them into the flour. The caramelisation of the honey results in a beautiful golden brown colour and crispy crust.
