Festive gingerbread & orange waffles

We are locking the scents of Christmas (cinnamon, cloves, orange) into this waffle. The trick is "activating" the spices: since aroma compounds are fat-soluble, mixing them into warm butter gives a much more intense flavour than just sprinkling them into the flour. The caramelisation of the honey results in a beautiful golden brown colour and crispy crust.

Instructions

1

Melt the butter and stir in the spice mix and orange zest. Let it cool slightly.

Tip: This is infusion. The warm butter extracts and preserves the essential oils.
2

Mix the flour and baking powder in a bowl.

Tip: The baking powder ensures a light structure.
3

Mix the eggs, honey and milk into the spiced butter, then pour into the flour. Mix until lump-free.

Tip: It is easier to mix honey with lukewarm butter than cold milk.
4

Cook the waffles until golden brown. Watch the smell: if it smells like caramel, good; if it smells burnt, take it out immediately!

Tip: Cool on a wire rack to stay crisp.

Recipe FAQ

Why is the waffle sticking?
The batter is stickier because of the sugar content in the honey. Grease the iron more thoroughly, and wait a little longer before opening it so the crust can set.
It burns too soon!
Honey caramelises (and burns) at a lower temperature than sugar. Turn the heat down on the iron!
