Wash the apples. If not organic, peel them, then cut into wedges that fit into the machine's feeder.

Tip: It's worth cutting out the core, as the seeds can give a bitter taste to the juice.

Juice the apples alternating with the lemon juice (or drizzle the lemon into the finished juice).

Tip: The ascorbic acid content of lemon juice inhibits enzymatic browning, so the juice remains a beautiful greenish-yellow.

Taste it. If too strong, dilute with water. If too sour, stir in the honey.

Tip: Honey dissolves with difficulty in cold liquid, be patient when stirring.

Why did the juice turn brown?
Apple flesh oxidises when in contact with air. Lemon juice slows this down, but it's best consumed immediately.
