Homemade crispy chicken nuggets

Homemade chicken nuggets are miles better than fast-food versions: made from real, juicy chicken breast, not pulp. The secret is in the breading, which protects meat from direct heat so it stays soft inside while becoming golden brown and crispy outside. This recipe brings back a childhood favourite but with quality ingredients.

Instructions

1

Wash chicken breast, pat dry, and cut into approx. 3x3 cm uniform chunks.

Tip: Uniform size ensures every piece cooks through at the same time.
2

Salt and pepper meat chunks. Prepare breading line: 1. plate flour, 2. plate beaten egg (with pinch of salt), 3. plate breadcrumbs.

Tip: Spruce up breadcrumbs with parmesan or garlic powder for extra flavour.
3

Coat meat in flour (shake off excess!), dip in egg, then roll in crumbs. Press crumbs on slightly.

Tip: Flour sticks to meat, egg to flour, crumbs to egg. This 'glue' chain holds coating together.
4

Heat oil over medium heat (approx. 170°C). Drop in a crumb: if it fizzes and rises, oil is good.

Tip: If oil is too cold, breading soaks up fat. If too hot, outside burns but inside stays raw.
5

Fry nuggets in batches for 3-4 minutes until golden brown. Don't overcrowd pan!

Tip: Too much cold meat cools oil suddenly.
6

Remove to kitchen paper to drain excess oil. Serve immediately.

Tip: Kitchen paper absorbs surface oil, keeping coating crispy.

Recipe FAQ

Can I bake them in the oven?
Yes, at 200°C for approx. 15-20 mins. Spray breading with oil beforehand to brown, though it won't be as evenly crispy as fried.
Why does coating fall off?
If meat was wet before breading, or you didn't press crumbs on enough. Always pat meat dry!
