- The peach flavour isn't strong enough.
- Use very ripe, soft peaches, or make a quick syrup from them (puree and boil with honey) before adding to the tea.
Homemade peach iced tea
A fruity variation of the iconic 'Sweet Tea' from the American South. The secret lies in making a tea concentrate: a strong, dark brew is created, which is then diluted to drinkable strength by ice and fruit juice. The peach and tea tannins complement each other perfectly, while the sugar smooths out any harsh notes.

Instructions
1
✓
Boil half a litre of water. Remove from the heat, add the tea bags, and steep for 5 minutes. Remove the bags.
Tip: Make a strong concentrate (more tea, less water), as the ice will dilute it later.
2
✓
While the tea is hot, stir in the honey to dissolve.
Tip: Sugar crystals or thick honey mix instantly in hot liquid (dissolution).
3
✓
Wash the peaches, slice them (skin on), and toss into the warm tea. Let it cool to room temperature.
Tip: During steeping, the peach transfers its flavour to the tea, and the tea infuses the fruit.
4
✓
Add the remaining cold water and the lemon juice. Refrigerate for at least 2 hours.
Tip: Lemon juice not only adds flavour but prevents the peach from browning (antioxidant).
5
✓
Serve in glasses filled with ice, garnished with fresh mint.
Tip: Never skimp on the ice! A little ice melts quickly and waters down the drink; plenty of ice chills it and doesn't melt as fast.
