Wash the lemon thoroughly in warm water, then grate the yellow zest. Then squeeze out the juice.
Tip: Only grate the yellow part, the white (albedo) would give a bitter taste to the drink.

In a bowl, mix the kefir, lemon juice, grated zest and honey until smooth.
Tip: Mix the honey with a little lemon juice first, it dissolves easier than in cold kefir.

Just before serving, pour in the soda water and fold gently.
Tip: Don't mix wildly, or the fizz will go. Bubbles 'lighten' the kefir texture.
