Homemade pork gyros

This recipe brings the scent of Greek streets to your home. We don't have a vertical rotisserie at home, but we can mimic the effect: cut the meat thinly, marinate aggressively (the citric acid and onion enzymes tenderise), then fry suddenly in a pan at high heat so the edges caramelise to a crisp while the inside remains juicy.

Marinating: Mix the oil, lemon juice, garlic, and spices. Toss in the thin meat strips. Let stand for at least 1 hour (or overnight).

Tip: Neck is the best choice because the fat tissues keep it juicy during cooking.

Frying: Heat a frying pan until smoking hot (no oil needed, it's in the marinade). Toss in the meat, but DO NOT overcrowd! Fry in 2-3 batches if necessary. Leave it alone for 1-2 minutes to brown the bottom, then turn over.

Tip: If you put too much meat in, it releases juices and steams. We need fried, crispy edges!

Warming pita: Sprinkle the pitas with a few drops of water and toss into the hot pan or oven for 1 minute to soften.

Tip: Cold pita breaks; warm pita is elastic and embracing.

Assembly: Smear the pita with tzatziki, pile on the fried meat, tomatoes, onion, and (if you want it truly Greek style) a few chips.

Tip: Greek gyros often includes chips alongside the meat!

You either cut it too thick or overcooked it. Thin strips need only a few minutes in a hot pan.
No tzatziki recipe?
Yes: grated cucumber (salted, squeezed), Greek yoghurt, garlic, olive oil, dill.
