- Why let it stand?
- Cold infusion (steeping) is a slower process than hot. Time is needed for the flavour of the cinnamon and lemon zest to permeate the apple juice.
- Can I use ground cinnamon?
- Not recommended, as it doesn't dissolve, makes the drink cloudy, and gives a 'dusty' feel on the tongue. A cinnamon stick gives a cleaner flavour.

This is not a strong alcoholic drink, but a relaxed, all-day refresher (in the mocktail version) or a light evening cocktail. The secret of the layered flavours is letting the spices infuse in the base liquid before topping up with soda.

Wash the lemons and slice them into thin rounds. Discard the ends (where there is only thick pith) as they are bitter.
Tip: Thin slicing increases the surface area where flavours can dissolve.

Place the lemon rounds and cinnamon sticks at the bottom of the jug. Gently press them with the end of a wooden spoon.
Tip: Muddling (crushing) helps release the lemon juice and the essential oils in the peel without destroying the structure.

Drizzle over the honey and mix with the crushed lemon.
Tip: The dense mixture of honey and lemon juice forms a 'base'.

Top up with the apple juice (or cider), stir, and place in the fridge to rest for at least 10-15 minutes.
Tip: This time is needed for diffusion, so the taste of cinnamon and lemon zest enters the liquid.

Tip: Do not stir too vigorously at this point, so the carbonation bubbles (CO2) do not escape and the drink remains fizzy.
