- Why did the drink become bitter?
- You probably crushed the mint too hard, damaging the leaves. Only press, do not pulp!
- Is white sugar okay instead of brown?
- Yes, but the caramel flavour of brown sugar harmonises better with apple cider.
Lime and mint cider mojito style
A cider variation evoking the world of the Mojito cocktail, where the refreshing power of mint meets the natural sweetness of apple. The key moment here is releasing mint aromas by muddling, not cutting, so essential oils enter the drink purely, without bitter tannins. A true summer cooler that refreshes immediately with its fizz and acidity.

Instructions
1
✓
Wash the mint and place in the bottom of glasses. Sprinkle with brown sugar and drizzle with a little lime juice.
Tip: The sugar crystals help act as an abrasive during muddling.
2
✓
Gently press the mint with the muddler. No need to mash it to pieces, just enough to release its scent.
Tip: You only need to rupture the oil glands on the leaf surface to release menthol. If you destroy the leaf, chlorophyll and bitter compounds are released.
3
✓
Fill the glass with ice cubes, then pour over the remaining lime juice.
Tip: Pouring over ice immediately cools the lime acid, giving a fresher taste sensation.
4
✓
Top up glasses approx. 3/4 full with apple cider.
Tip: Tilt the glass slightly when pouring so it doesn't foam up too much and carbonation remains.
5
✓
Fill the remaining space with soda water for a fizzier effect, then stir gently to bring the sugar up from the bottom.
Tip: Soda water adds extra bubbles and loosens the drink, making it even more refreshing.
6
✓
Garnish with lime wheels and a nice sprig of mint. Serve immediately.
Tip: Garnishing is not just visual: the scent of mint close to your nose intensifies the taste experience (retronasal smell).
