Pour the cider into a saucepan and start heating on medium heat. When steaming but not yet boiling, lower the heat.

Tip: Boiling must be avoided because the delicate aromas of alcohol and apple evaporate quickly above 78°C.

Sprinkle in the dried lavender and grated lemon peel. Let it simmer gently (liquid just moving) for 5 minutes.

Tip: Heat softens plant fibres and releases flavour compounds. Lemon peel oils add freshness.

Remove the pan from the heat. Stir in the honey and vanilla until the honey is completely dissolved.

Tip: Add honey at the end so the valuable enzymes in it are not damaged by excessive heat.

Meanwhile, whip the cold cream until stiff.

Tip: Cream whips well when very cold because fat globules can stably surround air bubbles.

Strain the hot cider into heatproof glasses so flower pieces don't get into the drink.

Spoon a large dollop of whipped cream on top and stick in a stem of fresh lavender.

Can I use non-alcoholic cider?
Of course, in fact, it is excellent with unfiltered apple juice too, although the taste will be slightly different.
It tastes too perfumed, what should I do?
Add a little more plain cider or a little lemon juice; acidity helps counteract the floral taste.
