Pour the cider into a saucepan, add spices (cinnamon, nutmeg, orange zest) and sugar. Heat until simmering.

Tip: Do not boil vigorously, as if using alcoholic cider, the alcohol will evaporate and aromas will be damaged.

Leave on low heat for 5-10 minutes for flavours to marry (infusion).

Tip: Heat causes essential oils to be released from the spices.

Remove from heat, stir in vanilla and aroma. Strain into glasses.

Tip: Aromas are added at the end because they are heat-sensitive.

Serve topped with whipped cream.
