Pizza Costarricense

Banana on pizza might seem strange to European eyes, but in Costa Rica, the combination of sweet and savoury is part of everyday life. The caramelised sweetness of fried plantain harmonises surprisingly well with salty cheese and the acidity of tomato. This is not a dessert pizza, but an exciting main course where tropical flavours meet Italian tradition.

Instructions

1

Mix the flour, salt, and yeast. Add the water and knead into an elastic dough (approx. 10 minutes).

Tip: Thorough kneading develops the gluten, which makes the dough stretchable and prevents it from tearing.
2

Set aside covered to prove for approx. 1 hour.

Tip: It rises faster in a warm place.
3

Meanwhile, in a frying pan, fry the plantain slices in a little oil until golden brown.

Tip: Pre-frying caramelises the banana's sugars and prevents it from making the pizza soggy.
4

Preheat the oven to 220°C.

5

Roll out the dough. Spread with tomato sauce, sprinkle with cumin and oregano, then the cheese.

6

Place the fried plantain slices on it.

7

Bake for 12-15 minutes until the cheese melts and the edge browns.

8

Sprinkle with fresh coriander and drizzle with olive oil when serving.

What banana should I use?
Preferably plantain, specifically the ripe one (yellow/black skin). If you only have regular banana, choose a firmer one and fry for a shorter time.
