- Yes, but steep green tea at a lower temperature, otherwise it becomes bitter, which doesn't suit the tart kefir.
- Will the kefir curdle?
- If you pour hot tea into the kefir, yes (curdling). That is why it's important the tea is completely cooled or only lukewarm.

Make a strong tea: steep the white tea in hot (not boiling!) water for 5 minutes, then strain.
Tip: Water that is too hot burns the delicate white tea leaves, making them astringent. Let the water cool back down for a few minutes after boiling.

Peel and finely grate the ginger. Stir into the still-warm tea and let stand for 10 minutes until the tea cools.
Tip: The spicy active compounds in ginger (gingerol) dissolve better in warm liquid.

Once the tea is at room temperature, strain it (if you don't like ginger pieces) and stir in the honey and lemon juice.
Tip: Add the honey to lukewarm liquid too, so its valuable enzymes aren't lost.
