- Why is the mash stringy?

Preheat the oven to 200°C. Wash the sweet potatoes, prick them with a fork, and place them on a baking tray in their skins.
Tip: Roasting in the skin (jacket method) keeps flavours in, and the flesh steams in its own moisture, making it much tastier than boiled.

Roast for 40-50 minutes until completely soft and sugary juices start to ooze out. Throw a clove of garlic (in its skin) alongside them for the last 15 minutes.
Tip: Roasted garlic is creamy and sweet, losing its raw pungency.

Halve the hot potatoes and scoop the flesh into a bowl. Squeeze the roasted garlic into it as well.
Tip: Work while still warm, it's easier to mash.

Mash with a potato masher or fork. Mix in the oil, coconut milk, salt, and lemon juice.
Tip: Do not use a hand blender, as the starch content of the potato can make the result gluey (although sweet potato is less sensitive than regular potato).
