Ostrich meat is nature's special gift: looking and tasting like red meat, yet nutritionally carrying the lightness of poultry. It is extremely lean, so speed and gentleness are the most important rules for grilling. The lemon and rosemary marinade not only flavours but helps preserve the softness of the meat fibres with its acidity.

Mix the olive oil, lemon juice, garlic, rosemary, and pepper. Toss the meat slices in it and let stand for 30 minutes at room temperature.
Tip: Sprinkle the salt only before cooking, as salt draws out water, and we want the moisture to stay in the meat (Osmosis).

Heat the grill until very hot. Salt the meat and place on the grate.
Tip: The sizzling sound indicates the meat surface is sealing immediately and browning has begun.

Cook for 3-4 minutes on each side. It is ready when the centre is still pink (core temperature: 54-57°C).
Tip: Since ostrich has almost no fat to keep it juicy, cooking time is critical. Better to take it off sooner than later!

Tip: During resting, the temperature rises another 1-2 degrees, and the fibres release the 'cramp' caused by cooking, so the juices spread out.
