Put the cider, orange juice, orange zest, and spices into a saucepan. Heat slowly until it starts to steam.
Tip: Slow heating gives the flavours time to marry without the drink boiling over.

Keep warm (simmering) for 10 minutes, then stir in the honey at the end.
Tip: It's best not to boil honey, as it loses its enzyme content and some of its aromas.

Tip: The cream needs to be cold for successful whipping.

Tip: Straining removes the cloves, which are not pleasant to bite into.
