- Where can I get Merguez?
- At good butchers or Middle Eastern shops. If unavailable, use lamb mince with lots of paprika and chilli.
Spicy merguez lamb burger
Merguez is a spicy North African lamb sausage, full of paprika, cumin, and garlic. If you use this meat for a burger, you hardly need to season it because the sausage has it all. Harissa (hot chilli paste) puts the cherry on top.
