Chicken ranch burger

Ranch dressing is America's favourite salad dressing, made with buttermilk, garlic and herbs. In this burger, the leaner chicken breast is made juicy and exciting by this creamy, herby sauce. A lighter alternative to beef burgers, but lagging nothing behind in flavour.

Instructions

1

Place the chicken breasts between two layers of cling film and beat with a meat mallet until they are evenly about 1.5-2 cm thick.

Tip: Uniform thickness ensures the meat cooks through evenly everywhere, so thinner parts don't dry out. (Heat conduction optimisation).
2

Mix the salt, pepper, garlic powder and paprika, then rub into the meats on all sides.

Tip: The dry rub forms a tasty crust when frying.
3

Heat the oil in the pan over a medium heat. Fry the chicken for about 4-5 minutes per side until golden brown and cooked through.

Tip: The internal temperature of the chicken must reach 74°C for safe consumption. (Food safety).
4

When the chicken is done, place the cheese on top, remove from the heat, and cover for 2 minutes to allow the cheese to melt in the residual heat.

Tip: Residual heat is gentler and prevents the meat from overcooking.
5

Toast the buns. Slice the tomato and onion into rings.

Tip: The crispness of the toasted bun complements the soft chicken well.
6

Spread Ranch dressing on both the top and bottom of the buns. Lettuce on the bottom, then the cheesy chicken, tomato, onion.

Tip: The herbs in the Ranch sauce (dill, parsley) highlight the chicken flavour.
7

Close the burger and serve with coleslaw.

Tip: The acidity of coleslaw goes great with this dish.

Recipe FAQ

What makes the chicken breast juicy?
The secret is even thickness (flattening) and precise cooking time. If you cook it too long, fibres contract and squeeze out moisture.
I don't have Ranch sauce, what can I substitute it with?
Mix sour cream with mayonnaise, crushed garlic, a little lemon juice, dill and parsley.
