The spicier, more fragrant sibling of the chocolate swirl. The scent of baking cinnamon and caramelising brown sugar is what makes one get out of bed on winter mornings. The technique is the same as the classic swirl, but using brown sugar gives a deeper, molasses-like flavour to the filling, which bakes crispy on the bottom of the dough.

Activate the yeast in the lukewarm, sugary milk for 10 minutes.

Tip: If it doesn't foam, the yeast is not active – start again with fresh, otherwise the pastry will be a 'dense rock'.

Mix the flour with the salt, add the egg, butter, and yeast milk. Knead a pliable dough, then prove until doubled (approx. 1 hour).

Tip: The dough should be soft but not sticky. If it sticks, add a little flour.

Roll out into a rectangle. Brush with melted butter, and sprinkle evenly with brown sugar mixed with cinnamon.

Tip: Brown sugar has higher moisture content, so it caramelises better during baking.

Roll up tightly, cut into finger-thick slices. Place on a baking tray lined with baking paper, and let rise for another 20 minutes.

Tip: The structure of the rested dough relaxes, making the result truly soft.

Bake at 180°C for approx. 20 minutes until the top is a beautiful golden brown.

Tip: Scent is the best indicator: if there is an intense cinnamon smell in the kitchen, check it!

You rolled it too loosely, or used too much butter. But don't worry, the leaked, caramelised sugar is the best part!
Can I cut with thread?
Yes! Dental floss or thread doesn't squash the soft dough when cutting, so the swirl shape remains nicer.
