Mix the yoghurt, tandoori spice, lemon juice, crushed garlic, grated ginger and salt in a bowl.

Tip: The acidity and enzymes of the yoghurt pre-digest the fibres, making the chicken butter-soft. (Enzymatic tenderisation)

Cut the chicken into bite-sized cubes, toss in the marinade, and place in the fridge for at least 30 minutes.

Tip: The longer it sits, the deeper the flavours penetrate, but don't leave longer than 2 hours due to the lemon juice, or the meat may become mushy.

Preheat the oven to 220°C (fan). In a hot frying pan with a little oil, pre-cook the drained chicken for 3-4 minutes, just until it turns white and gets a little colour.

Tip: No need to cook completely, the process finishes in the oven.

Roll out the pizza dough. Spread thinly with oil or tomato sauce (optional), sprinkle with cheese, the pre-cooked chicken, and thinly sliced onion.

Tip: Cheese goes on the bottom, protecting the dough from the moisture of toppings.

Bake for 10-12 minutes until the edge of the dough blisters and browns. Sprinkle with fresh coriander when serving.

Tip: Never bake coriander, as it loses its fresh, citrusy aroma.

Why do I need to pre-cook the chicken?
Raw chicken would release a lot of water onto the pizza during baking, making the dough soggy. Pre-cooking 'seals' the moisture into the meat.
