- Is vanilla sugar okay?
- In an emergency, yes, but the taste of a real vanilla pod or high-quality extract is much deeper and more complex. Vanilla sugar often only contains synthetic vanillin.
- Why nutmeg?
- In small amounts, nutmeg acts as a 'catalyst' for milky, creamy flavours (like vanilla), enhancing them.
Vanilla and honey mulled cider
If apple pie were drinkable, it would taste like this. The rounded, sweet scent of vanilla and the floral nature of honey take away any sharp acidity from the apple cider. This is a 'comfort drink' that soothes and pampers. When using vanilla, it is important to be patient and let the pod infuse in the warm liquid, because the real flavours come not from extract, but from the seeds and the pod.

Split the vanilla pod lengthwise and scrape out the black seeds with the back of a knife. Do not throw away the pod!
Tip: The seeds have the most intense flavour, but the pod also contains plenty of aromatic substances which we can extract by cooking.

Put the cider in the saucepan. Toss in the vanilla seeds, the scraped pod, the cinnamon stick, and the pinch of nutmeg.
Tip: We start heating the spices with the cold liquid so they have time to dissolve.

Heat until simmering (approx. 80-90°C), then keep at this temperature for 10 minutes.
Tip: Work on low heat so the flavours concentrate rather than evaporate.

Remove from the heat, fish out the cinnamon and vanilla pod, then stir in the honey.
Tip: In the hot liquid, the honey dissolves immediately.

Pour into glasses. Pile whipped cream on top.
Tip: The tiny black specks of vanilla in the cream or drink are a sign of quality.

If you have another vanilla pod, you can garnish with it, or sprinkle with a little cinnamon.
