Cut the courgette into very small cubes or thin quarter-slices.

Tip: Since the courgette remains raw, it is important it's small so the acid can penetrate and it's pleasant to chew.

Cut the avocado into 1.5 cm cubes, and immediately drizzle with half the lime juice in a bowl.

Tip: The acid prevents oxidation (browning), so the avocado stays vibrant green.

Add the diced tomatoes (without seeds) and the finely chopped red onion.

Tip: Remove tomato seeds, otherwise they will make the food watery.

Deseed the chilli (if you prefer less heat) and chop finely, then add to the bowl along with finely chopped coriander.

Tip: Heat (capsaicin) is most concentrated in the veins and seeds.

Pour over the remaining lime juice, season with salt and pepper, then toss very gently.

Tip: Salt highlights tomato and courgette flavours, and 'draws juices', binding the flavours.

Won't the avocado become too soft?
Choose ripe but still firm avocado (yields slightly to pressure but doesn't squash). Lemon juice helps preserve its texture and colour.
Can courgette be substituted?
Yes, crunchy cauliflower florets or hearts of palm are also excellent bases.
