Pour the cider into the saucepan, add the sugar, cinnamon, cloves, and orange peel. Heat over medium heat but DO NOT boil.
Tip: Alcohol starts to evaporate at 78°C. Just let it steam (approx 70-75°C) to infuse flavours.

Tip: Infusion takes time; heat sets the essential oils in the spices in motion.
