Tea is more than hot water: it's an extraction process. Here, the tannic depth of black tea is balanced by the sweetness of fresh fruits. Under the effect of hot water, fruit cell walls open and transfer their flavour to the drink, creating a natural, vitamin-rich 'punch' without alcohol.

Boil the water with the cinnamon and cloves, then cook for 2-3 minutes.

Tip: Hard spices need higher heat and more time to release flavour than tea leaves.

Remove from heat, put in the tea bags, steep for exactly 3-5 minutes, then remove them.

Tip: After 3 minutes caffeine is released; after 5 minutes bitter tannins start to leach out.

Meanwhile, cut the apple and orange (with peel) into thin slices.

Tip: Essential oils (limonene) in the orange peel provide the real citrus scent.

Throw the fruits into the hot tea, add the honey, and let stand for 2-3 minutes before serving.

Tip: The hot liquid 'blanches' the fruit, opening its pores (osmosis), mixing the flavours.
