Guajillo is one of Mexico's most popular dried chillies: known not for stinging heat, but for deep, fruity, slightly smoky flavour. The sauce made from it is silky and bright red. This dish is a play of textures: crispy tortilla, velvety sauce, creamy egg yolk, and refreshing sour cream meeting.

Deseed dried chillies, tear apart, and toast in dry pan for 10-15 seconds per side. Put in hot water to soak for 15 minutes.

Roast tomato and half onion in pan until black spots appear (charring).

Tip: This is 'tatemado' technique: charred bits give deep, smoky flavour to salsa.

Blend soaked chilli, roasted tomato, onion, garlic, and a little soaking water until smooth. If you want to be very pro, strain it.

Tip: Chilli skin sometimes stays tough, straining makes sauce truly restaurant quality.

Fry sauce in a spoon of oil ('refry') for 5-10 minutes until thickened and darker. Salt.

Tip: Frying the sauce integrates flavours.

Meanwhile fry cut tortillas in plenty of oil until crispy. Drain.

Toss tortilla in sauce, serve immediately with fried egg, sour cream, cheese, and red onion.

In Mexican deli shops or online. Do not substitute with plain hot paprika, as flavour character is different.
