Ethiopian style spiced chicken pizza

What happens when Italian pizza meets the flavours of the Horn of Africa? This recipe makes the classic pizza wild with 'Berbere' spice blend. Berbere is a complex, spicy-warm Ethiopian spice (chilli, ginger, cloves, fenugreek...), which forms a surprisingly harmonious couple with the tomato sauce and cheese. A little coriander at the end freshens up the whole effect.

Toss the chicken strips with the oil and berbere spice. Pre-fry them in a hot frying pan for 2-3 minutes (they don't need to be cooked through).

Tip: Pre-frying caramelises the spices and seals the meat, so it doesn't make the pizza soggy during baking.

Roll out the pizza dough. Spread with the tomato sauce, scatter with the cheese.

Distribute the spiced chicken and onion over it.

Bake in the hottest possible oven (min. 220°C) for 12-15 minutes, until the crust is blistered and brown.

Tip: Pizza loves heat shock.

I don't have berbere spice, what should I do?
Mix together red paprika, chilli, ginger, cloves, cinnamon and cardamom. It's not the same, but gives a similar character.
