- Why does the milk foam collapse?
- If the milk is too hot (boiled), the protein structure changes and won't hold air. The ideal temperature for frothing milk is 60-65°C.
- Should I use ready-made spice mix?
- Feel free! But check if it contains sugar. If it does, reduce the amount of honey.
Gingerbread latte
This drink is nothing less than Christmas in liquid form. The base of a latte (milky coffee) is the meeting of good espresso and steamed milk, which is livened up here by the characteristic spices of gingerbread (cinnamon, ginger, cloves). The secret is activating the spices: aromas dissolve best in the hot milk or coffee, not sprinkled on afterwards. A hug in a mug.

Instructions
1
✓
Brew the coffee. While still hot, stir in the honey and gingerbread spice mix.
Tip: The heat and acidity of the coffee help reveal the flavours of the spices. If you put them in the milk, they might settle at the bottom.
2
✓
Heat the milk to approx. 60-65°C (when it is steaming but the side of the pan doesn't burn your hand).
Tip: This is the temperature where the milk's sweet taste is most intense (due to lactose) and the foam is most stable.
3
✓
Froth the milk until you get a creamy, micro-foam texture (the goal is not 'bath foam', but silky cream).
Tip: Good milk foam is shiny and fluid, like thin paint.
4
✓
Pour the spiced coffee into the bottom of the glass.
Tip: This provides the base.
5
✓
Tilt the glass and slowly pour the frothed milk over it. Spoon the foam on top at the end.
Tip: If you are skilful, the milk and coffee mix beautifully, and the foam stays on top (layering).
6
✓
If you crave extra indulgence, top with whipped cream and sprinkle with cinnamon.
Tip: The scent of cinnamon immediately activates Christmas memories.
