In Sweden coffee break (Fika) is sacred, and essential accessory is Kanelbulle. How is it different from our buns? Dough contains cardamom, and sprinkled not with icing but nib sugar ('pearl sugar'), making it less sticky, more spicy experience.

Mix yeast and sugar in lukewarm milk, let bloom 10 minutes. Mix flour, salt, cardamom.

Tip: Cardamom gives distinctive Scandinavian taste, don't skip!

Add milk mixture and soft butter to flour, knead smooth, shiny dough (approx. 10 mins). Prove in warm place 1 hour.

Tip: Butter fat coats gluten strands, making crumb fluffy.

Roll out to rectangle. Spread with filling butter, sprinkle with cinnamon sugar. Roll up, cut into slices.

Tip: If rolled too tight, centre might push out during baking (volcano effect).

Place on baking tray, cover, and prove another 30 minutes. Brush with egg, and bake at 200°C for 15-20 minutes.

Tip: Second rise gives final volume and softness.

Likely added too much flour during kneading. Dough should be soft, slightly sticky before first rise.
