Turkey calzone

A calzone is essentially a folded pizza which cooks the filling in its own steam. This technique produces a juicier result than baking an open pizza, as the flavours don't evaporate but remain inside the dough pocket.

Knead the dough from the flour, yeast, water, oil and salt. Prove for 1 hour.

Tip: The secret to good pizza dough is long kneading, which makes the dough elastic and stretchable.

Quickly sear the turkey cubes with the garlic.

Tip: You don't need to cook it completely, as it will continue to steam inside the dough, so it won't dry out.

Roll out two discs from the dough. Spread with tomato, sprinkle meat and cheese on half. Fold over the other half and seal thoroughly.

Tip: Twist the edge back or press down with a fork so the cheese doesn't escape.

Brush with egg, prick the top (to let steam escape), and bake at 200°C for 20-25 minutes.

Tip: Pricking (steam chimney) prevents the dough from bursting.
