The lighter, fruitier cousin of mulled wine. Apple cider is inherently spicier in character than wine, so with less sugar and spice, we get a perfect festive drink. The scent that fills the kitchen while cooking is therapy in itself.

Pour the cider into a saucepan and start heating on medium heat.

Tip: Heat slowly so the alcohol doesn't evaporate suddenly (if making an alcoholic version).

Drop in the spices: cinnamon, cloves, nutmeg, orange peel, and stir in the sugar.

Tip: It's worth putting the spices in a tea infuser so you can remove them in one go at the end.

Heat (but do not boil!) for approx. 10-15 minutes to let the flavours meld.

Tip: 'Not boiling' is key: keep it below boiling point (approx. 80°C).

In the last 2-3 minutes, drop in the apple slices too.

Tip: This warms them up and they take on the spicy flavour, but remain crunchy.

Fish out the spices (or the tea infuser).

Tip: Leaving them in when serving makes biting on a clove is an unpleasant experience.

Ladle into glasses, top with whipped cream and the cooked apple slice.

Tip: Consume hot.

Can I use plain apple juice?
Yes, but the fermented character of cider gives that extra depth of flavour. With apple juice, it becomes 'spiced apple juice', which is excellent for children.

You included the white part of the orange peel. Only peel off the thin yellow layer; that contains the oil, the white pith is bitter.
