'Mulled Cider' is a winter classic in British pubs. Ginger and cinnamon not only flavour but also have physiological effects: they 'heat' the body (improving circulation), so combined with the hot temperature, it is a real shield against the cold. The key is slow heating so the alcohol doesn't evaporate, but the spices transfer all their aromas to the liquid.

Peel the ginger (easiest with the edge of a spoon) and cut into thin slices.

Tip: The thinner the slice, the larger the surface area in contact with the liquid, so more flavour dissolves (extraction).

Pour the cider into the saucepan, add the ginger, cinnamon, and orange peel. Start heating.

Tip: Heat under a lid to keep the aromas in.

Keep the liquid below boiling point (approx. 80-90°C) for 10-15 minutes. Do not boil!

Tip: If it boils, the alcohol evaporates, and pectins may precipitate, making the drink cloudy.

Remove from the heat, wait 1-2 minutes, then stir in the honey and lemon juice.

Tip: We treat the honey and Vitamin C-rich lemon juice gently with heat.

Strain into mugs, removing the spices.

Tip: Ginger pieces can be too strong if bitten into, so it is better to strain.

If you like, crown it with whipped cream, which makes the drink creamy as it melts.

Tip: The fatty cream forms a layer on top, slowing down the cooling of the drink (insulation).

How spicy should it be?
The strength of ginger depends on the gingerol compound. If you want it spicier, grate the ginger instead of slicing it, releasing more active ingredients.
Can I put it in the microwave?
Better not. In the microwave, it heats unevenly and boils easily, which ruins the aromas. The process is more controllable on the hob.
